Most tool trailer and work van builds use pull-out drawers under counters for storage space. But a hinged countertop can also give you convenient access to certain items stored below them.
This option doesn't work well if you always have thing on your worktop spaces, but can give you options if you want to use your cabinet faces for other things, like mounting battery or battery chargers. Batteries mounted on a cabinet face (under a countertop) would prevent you from accessing the space behind them, but a hinged countertop still lets you use that space.
